It is one of the mouth-filling dishes you can ever have. Made from whole-roasted mutton or lamb, Ghuzi is often served on Skewers. Served with rice, vegetables, and hazelnuts on top of it, it is a mouth-filling dish you can have upon a visit to the United Arab Emirates.

Ingredients You Need

Here are the different types of ingredients you need for cooking Khuzi UAE.

The first list is for the lamb.

For The Lamb

  • 1 shoulder of a lamb (3 to 5 pounds), trimmed of excess fat, boned, and butterflied, bones reserved.
  • Kosher salt and pepper freshly ground.
  • 3 pieces of 1/2-inch fresh ginger, peeled.
  • 5 cloves of garlic.
  • 2 pinches of saffron threads.
  • 4 tbsp extra-virgin olive oil.
  • 2 medium yellow onions, finely chopped.
  • 4 whole cloves.
  • 6 cardamom pods.
  • 3 bay leaves.
  • 2 pieces of cinnamon sticks.
  • 1 tbsp black peppercorns.
  • 1/4 cup of melted ghee.
  • 2 tbsp of tomato paste.

For The Rice & The Potatoes 

Here are what you need for the rice:

  • 2 cups of basmati rice.
  • 1 pound halved (if large) fingerling potatoes.
  • 6 tbsp extra-virgin olive oil.
  • Kosher salt and pepper freshly ground.
  • Zest of one navel orange and 2 tbsp fresh orange juice.
  • 1 tbsp of whole-grain Dijon mustard.
  • 1 tbsp of white balsamic vinegar.
  • 2 cups of baby arugula.
  • 1/2 cup of dried currants.
  • 1/2 cup of pistachios, chopped.
  • Clementines, both halved and whole, for garnishing.

The Process To Make It

Here is the process of making this delicious recipe straight from the United Arab Emirates.

Here are the steps to making Khuzi:

Step 1

First, you need to prepare the lamb. Pat the lamb dry. Generously season it with salt and pepper. Grate 2 pieces of ½ inches ginger and 2 cloves of garlic into a bowl of small size. Now add a pinch of saffron, then run the mixture over the inside of the lamb evenly. Now, roll up your lamb using the fat on the outside. Secure it with kitchen twine.

Now heat two tablespoons of oil in a Dutch oven. You can also use a heavy-bottomed oven. Add the lamb bones and cook them until they are brown. Now add the lamb and cook all the sides until it is brown. Finally, transfer the lamb to a plate and wipe off the oil/fat using a paper towel.

Step 2

Now use the onion and two tablespoons of oil into the pot. Now cook it until soft and golden brown and add three cloves of garlic. Slice the remaining piece of ginger. Now add the lamb bones and the meat, bay leaves, cinnamon, cardamom, cloves, peppercorns, and a pinch of saffron into the pot. Now pour water into it to boil it while covered. Once cooked, discard the bones.

Step 3

Now Preheat the oven to a temperature of 325 degrees. Now, use a rimmed baking sheet and transfer the lamb into it. Strain the cooking liquid and reserve it. Now, combine ghee with tomato paste and season it with salt. Brush the mixture of ghee on the lamb. Now roast while occasionally brushing it up with juices.

Step 4

Now you have to make the rice and the potatoes for Khuzi. You need to clean and soak the rice for 30 minutes and then drain it off of the water.

Step 5

Use a rimmed Baking sheet and use the two tablespoons of oil and toss the potato in it. Now, season it with pepper and salt. Now arrange the whole thing in a single layer and then roast it. Before you serve the meal, you should warm the potatoes again at 325 degrees.

Step 6

Now use the reserved lamb cooking liquid along with the rice and add them into a large saucepan. Now season the whole thing with salt and boil it while covering for about 15 minutes and let the rice get tender.

Step 7

Now take a small bowl – use the orange zest and the juice. Whisk it in vinegar, and use the remaining 4 tablespoons of oil. Season it well with pepper and salt. Now drizzle dressing over the arugula and toss it to combine.

Step 8

Now that you are done cooking the Khuzi, you can move forward with serving it. Take a large platter and arrange the whole thing properly.
